Hi, Big Truck!!!
So E's latest obsession is "Big Trucks" which his daddy taught him to say with lots of gusto. It may sound like "Di Duh" to you, but he's most definitely saying "Big Truck" in his manliest voice!
We watch for them in parking lots, while we are driving, on TV, and from the window. The MOST exciting is when the trash truck comes RIGHT outside our house to collect the trash.
Can you even stand it?

The Chair
One of Elliott's favorite Christmas gifts is his comfy chair! He had it at Mimi and Grandaddy's house, but we returned it in TN and just re-bought it in CA!
He looooved playing with it in TN, and was pretty excited to see it re-appear at home after naptime yesterday:

Soup
Well, as we all know, I'm no Suzie-Homemaker, but I do my best with all of the hats that I wear!
I thought I'd share a recipe that we've been loving this winter that's super easy, quick, with only a few ingredients. We are home in California, it's chilly, and my boys are feeling a little under-the-weather, so I took a break from editing this afternoon for soup!

White Bean-Chicken Chili (prep time: 4 minutes (love that!), cook: 22 mins)
1 teaspoon olive oil
1 cup chopped onions
2 tsp. bottles minced garlic
2 (15.5 oz) can cannellini beans, undrained
3 cups chopped chicken
1 14.5 oz. can chicken broth
1.5 t salt-free Mexican seasoning (or white chili mix)
1/4 t salt
1 cup shredded Monterey Jack cheese
~ Saute onions in oil and garlic.
~ Mash one can of beans.
~ Add all ingredients to pot (except cheese).
~ Bring to a boil, reduce heat and simmer for 15 minutes.
~ Add cheese; simmer for 5 minutes, stirring constantly.
