I thought I'd share a recipe that we've been loving this winter that's super easy, quick, with only a few ingredients. We are home in California, it's chilly, and my boys are feeling a little under-the-weather, so I took a break from editing this afternoon for soup!

White Bean-Chicken Chili (prep time: 4 minutes (love that!), cook: 22 mins)
1 teaspoon olive oil
1 cup chopped onions
2 tsp. bottles minced garlic
2 (15.5 oz) can cannellini beans, undrained
3 cups chopped chicken
1 14.5 oz. can chicken broth
1.5 t salt-free Mexican seasoning (or white chili mix)
1/4 t salt
1 cup shredded Monterey Jack cheese
~ Saute onions in oil and garlic.
~ Mash one can of beans.
~ Add all ingredients to pot (except cheese).
~ Bring to a boil, reduce heat and simmer for 15 minutes.
~ Add cheese; simmer for 5 minutes, stirring constantly.
i wanted to find this receipe for a friend. and dont worry- it took me only a couple minutes to find it on your blog, because apparantly thats how familiar i am with the timing of your posts. totally not creepy.
